A Spanish chef takes his three-star Andalusian cuisine to Dubai with a luxury suspended restaurant

A Spanish chef managed to bring his culinary experience to Dubai, one of the ideal places where luxury and good gastronomy combine to offer tourists the best experience. Spanish chef Paco Morales joined the group of Iberian cooks who chose this destination to bring the best of cuisine to the Emiratis.

The renowned cook established a luxury restaurant that features the best of gastronomy with the recognition of the Michelin guide. Morales already has a luxury space called QABU, located in the One & Only One Za’abeel hotel (Dubai).

QABU is a restaurant suspended 100 meters high where you can enjoy the best Andalusian dishes with an experience that also includes the best of Emirati culture. Here, a seven-course tasting menu called “Al Ándalus” is offered at a price of 224 euros. This experience allows you to travel with flavors to Spain and enjoy dishes such as slow-cooked beef cheek with celeriac puree, caper leaves, mustard seeds, and buckwheat, or the delicious lobster with sautéed spinach, smoked butter emulsion, and sheep cheese.

This place is located in the One Za’abeel towers, connected by a boulevard called ‘The Link,’ suspended a hundred meters above the street in the heart of Dubai. This location makes dinner an innovative experience where you can enjoy the best views and the dishes that received the distinction of three Michelin stars during this 2024.

Paco Morales himself defines this space as “an exciting gastronomic and sensory journey inspired by the history and contemporaneity of the flavors and ingredients of the historic Andalusian cuisine, always reinterpreted by us.” Therefore, each dish is backed by a study where a multidisciplinary team of documentalists, historians, archaeologists, and designers studied the history of Andalusia to extract the essence of this ancient cuisine.

In addition to QABU, the Spanish chef is in charge of a prestigious venue in Spain, El Bar de Paco, a more informal and economical concept based on tapas and portions that can be tried in Córdoba and also in Athens (Hotel One & Only Aesthesis Athens).
